Sweet potato and kohlrabi mash
This is a refined variation on potato mash in my opinion. The sweet potatoes impart a joyful orange hue; the kohlrabi makes the texture fluffy; and a hint of coconut cream makes the ensemble utterly smooth. The sweetness of the potatoes is balanced by the earthiness and bitterness of the kohlrabi. Frankly, this is a gourmet side dish.
Ingredients (serves 4 as a side)
2 Small sweet potatoes, peeled
1 Small kohlrabi (a vegetable from the cabbage family that tastes like turnip)
3 tbsp coconut cream
Chopped chives to decorate
Method
Cube and boil the potatoes and kohlrabi in water for about 10 min until cooked. Expect the kohlrabi to stay quite firm.
Drain and blend in a high speed blender with the coconut cream, salt and pepper.
Serve sprinkled with chives.
