Airy fayre chocolate mousse
Chocolate lover, look here. I came up with this recipe to use up all the spare egg whites, but don’t be fooled to think that this is whatever leftover-based dish. It’s remakably light yet it has an intense chocolate flavour. Plus it has no added sugar., so it is a guilt-free treat. It’s so good that now I find myself looking for recipes using egg yolks instead!
Ingredients (serves 4 as a side)
100g 70% dark chocolate buttons
3 tbsp plant milk or coconut cream
1 shot brown rhum
Cacao nibs
Method
Melt the chocolate in a bain-marie with the milk (or coconut cream).
Take it off the heat, stir in the rhum and let it cool a little.
Meanwhile, beat the egg whites to very firm.
Gently fold the chocolate into the egg whites.
Transfer to serving bowls or small glasses and sprinkle with cacao nibs to add texture and intensity.
Regrigerate to set and serve cold.
