Airy fayre chocolate mousse

Chocolate lover, look here. I came up with this recipe to use up all the spare egg whites, but don’t be fooled to think that this is whatever leftover-based dish. It’s remakably light yet it has an intense chocolate flavour. Plus it has no added sugar., so it is a guilt-free treat. It’s so good that now I find myself looking for recipes using egg yolks instead!

Ingredients (serves 4 as a side)

  • 100g 70% dark chocolate buttons

  • 3 tbsp plant milk or coconut cream

  • 1 shot brown rhum

  • Cacao nibs

Method

  • Melt the chocolate in a bain-marie with the milk (or coconut cream).

  • Take it off the heat, stir in the rhum and let it cool a little.

  • Meanwhile, beat the egg whites to very firm.

  • Gently fold the chocolate into the egg whites.

  • Transfer to serving bowls or small glasses and sprinkle with cacao nibs to add texture and intensity.

  • Regrigerate to set and serve cold.
