Zesty red cabbage slaw

Don’t know what to do with red cabbage? This crunchy salad comes with a twist. Hint: it’s in the lemon zest. Again, highly satisfying to eat with chopsticks!

This works well as a main, a side dish or as part of a poke / buddha bowl.

Ingredients (serves 2 as a side)

  • 3 cups red cabbage, shredded

  • 1 Large carrot, grated

  • Beetroot, peeled and grated (optional)

  • Young salad leaves

  • Herbs, chopped (spring onions, parsley and / or coriander)

  • Small handful cashew nuts, toasted and roughly chopped

Dressing

  • 1/2 lemon zest and juice, more if you like it sharp

  • 1-2 tbsp extra virgin olive oil or flaxseed oil

  • Salt

  • Fresh red chilli, sliced finely on the diagonal

Method

  • In a mixing bowl, toss the cabbage, carrot, beetroot (if using), salad leaves with the dressing ingredients.

  • Serve sprinkled with herbs and toasted cashew nuts.
