Zesty red cabbage slaw
Don’t know what to do with red cabbage? This crunchy salad comes with a twist. Hint: it’s in the lemon zest. Again, highly satisfying to eat with chopsticks!
This works well as a main, a side dish or as part of a poke / buddha bowl.
Ingredients (serves 2 as a side)
3 cups red cabbage, shredded
1 Large carrot, grated
Beetroot, peeled and grated (optional)
Young salad leaves
Herbs, chopped (spring onions, parsley and / or coriander)
Small handful cashew nuts, toasted and roughly chopped
Dressing
1/2 lemon zest and juice, more if you like it sharp
1-2 tbsp extra virgin olive oil or flaxseed oil
Salt
Fresh red chilli, sliced finely on the diagonal
Method
In a mixing bowl, toss the cabbage, carrot, beetroot (if using), salad leaves with the dressing ingredients.
Serve sprinkled with herbs and toasted cashew nuts.
